The menu there lists 3 styles: Bauer (“Farmer”, with Speck (bacon) potatoes, and cheese), Schwob (“Swabian”, with bacon, onions and cheese), and Spezial (“Special”, with tomato, mozzarella and cheese).
BTW, Speck is a word some of you may remember from Bolzano, where it refers to a special type of cured bacon that needs no further cooking, like salami. Speck in Germany, however, means “bacon”, which needs to be cooked before it is eaten; the type of meat called just Speck in the South Tyrol is called Bauernspeck in Germany. So, I think my Bauer had regular, not Bauern speck.
